It’s the most wonderful time of the year

PC230457I have always loved all of the baking & cooking…and yes I have to say it…the eating that goes on around the holidays.  For more reason then just the food, it is a time for sharing with loved ones far and near the abundance in each others lives. This time of year is about many of what some may call the intangibles, those of faith, hope & love.  This year has especially been a grand time for me, as my daughter Morgan and I had a baking day. We have cooked together in the past, this year has been especially wonderful for me. As we see the traditions that Tim & I have either carried on from our families, or some we have started…we are beginning to see that they are meaningful to her, and that is exciting. So no matter what your traditions are, may you enjoy them to the fullest at this wonderful time of the year.

Time

It seems that I have heard a lot this year that people are struggling as to what gifts to give.  Will it be special enough, or what the recipient really needs or wants? One of the most precious things we can give at this special time of year is the gift of ourselves and our time.  The laughter shared with a friend over a lingering lunch or a quick cup of coffee. The gift made special by the small token tucked inside that reminds the recipient that they are special and thought of at this very festive time.  As we seek out the gifts we will give this season, let us remember that each of us is a gift to the people in our lives.  Merry Christmas, Happy Holidays & Seasons Greetings from all of us here at Lindsay House Bed & Breakfast.

Manawa Holiday Celebration at the Bed & Breakfast

This past Sunday here at the Lindsay House Bed & Breakfast, Santa arrived in Manawa WI on a horse drawn wagon. This is held as a fund raiser for the food pantry here in Manawa & all the people who attended stepped up their donation efforts and the Manawa Area Chamber of Commerce was able to not only donate the largest amount of food & toys in recent years, also they were able to match the cash donations given at Santaland this year as well. PC060447 Children young & old enjoyed having their pictures taken with the big guy himself, some even brought letters that they had written to Santa.  The horse drawn wagon rides were another fun part of the day as well as the cocoa & cookies which were a treat. Thank you to all who attended & volunteered to make it another wonderful holiday season !

Holiday Recipe: Ginger Orange Marmalade Scones

In my quest to try new recipes I stumbled upon Ginger Orange Marmalade Scones. A tasty recipe to be sure, however in the spirit of all cooks everywhere there are some subtle changes that needed to happen. I present the recipe with the “tweaks” below. Enjoy!

Ingredients

  • 2 cups flour
  • ¼ cup sugar
  • 1 Tablespoon baking powder
  • ½ teaspoon salt (only add if using unsalted butter, if using salted butter, omit)
  • ½ cup (8 Tablespoons) butter, chilled and cut into pieces
  • ½ teaspoon ginger
  • 1 teaspoon crystallized ginger
  • ½ cup orange marmalade (chunky kind with bits of orange peel)
  • 1 egg
  • ¼ cup milk (if you would like the scone tangier, you can use buttermilk)
  • Sugar

Instructions

  1. Heat oven to 400 degrees F.

  2. Mix flour, sugar, and baking powder, salt & gingers together.

  3. Add the egg, marmalade and mix.

  4. Add in the butter and use a fork or a pastry blender to cut into mixture until it is crumbly.

  5. Add milk slowly and mix until the dough comes together. Add more milk if needed. Dough should come together so that you can pat it out.

  6. Place dough on a board and gently bring it together. You may want to have some flour close by so you can dust the board if need be to keep dough from sticking.

  7. Divide dough in half.

  8. Press down on each half until it is about ½ to 1 inch thick. Use either round or square cutter to cut out your scones. You can also press it into a circle of the same thickness and cut them into wedges, I prefer to use a cutter, it is of course whatever method you like to use.

  9. Place scones on a parchment lined baking sheet (a jelly roll pan works great for this as it has sides and is slightly larger than a standard cookie sheet).

  10. Sprinkle a little sugar on each scone.

  11. Bake for 10 minutes or until golden brown.
