Our first cooking class was this past Saturday April 24th here at the Lindsay House Bed & Breakfast. 3 friends joined us and what a good time we had. Lots of conversation and laughter and learning was done. Pat Latch, my very dear friend and seasoned home cook and professed foodie was a wonderful teacher, engaging and inviting the participants to be hands on. Teaching the difference between a habanero and a Fresno pepper, not only teaching but slicing them open and having her students give the peppers the nasal appraisal so that they might be able to note the differences no matter how subtle in the flavor and heat of the peppers.

Thursday, April 8th, 2010The Rodeo City Rider Inc., is an equine riding club based here in Manawa. This club was instrumental in creating over 8 miles of equestrian trails at Hartman Creek State Park which is located just outside Waupaca, WI. The hardworking members designed, constructed, and still maintain these beautiful trails. Over the years, the Rodeo City Riders Inc. has donated over $10,000 to equine affiliated organizations such as therapeutic riding academies, county 4-H clubs, and horse rescue farms. A $500 scholarship will be awarded to a Waupaca County graduating Senior, this year. To create further funding for these worthwhile projects they have published a cookbook aptly named Rodeo City Rider Cookbook we are pleased to have these for sale here at Lindsay House Bed & Breakfast. As a home cook these are my favorite types of cookbooks, as you are getting these recipes from home cooks just like us. The cost of these cookbooks is $8 or 3 cookbooks for $21. A real bargain and a real chance to continue to effect change in our Community and County.
April Showers bring May Flowers
Thursday, April 8th, 2010Imagine my disbelief this morning when I woke up
to find snow on the ground. Just yesterday my friend Kerri and I were discussing gardening and what our plans for the spring (which is here by the way) are. However as I have been told before, it’s Wisconsin, if you don’t like the weather wait 5 minutes. In saying that I wanted to share with you some pictures that I took this morning with regards to the snow. The great thing about a new snow is how beautiful it looks even on April 8th. Enjoy and let’s hope Old Man Winter and Mother Nature don’t have another argument before next winter. Hey it’s Wisconsin…you never can tell!
Weekend Recipe Successes
Monday, April 5th, 2010Well as many of you may know I am somewhat of a foodie and love to try new recipes, or twists on recipes I hadn’t thought to do. So I tried some new things over the weekend on some guests and they seemed to enjoy them so I thought I would share them with you. The first was a Strawberry Ricotta Pancake recipe which is a recipe originally presented by Magnolia House Bed & Breakfast, Fredricksburg TX. However as I sometimes, who am I kidding, most of the time do, I reworked the recipe a little, based on several factors such as ingredients on hand and to be really honest, what I really feel like doing on any given morning. This is the recipe that I came up with for my version of Strawberry Ricotta Pancakes with Orange Sauce.
1 cup all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
2 Tbsp. sugar
1/4 tsp. salt
3 Tbsp. melted butter
1/2 cup ricotta cheese
3/4 cup buttermilk
2 egg, separated
grated zest of 1 orange
3/4 cup thinly sliced fresh strawberries
In a large mixing bowl whisk together the dry ingredients. In a separate bowl combine the melted butter, ricotta cheese, buttermilk, egg yolks and orange zest. Mix well. Add the milk mixture to the dry ingredients, stir to combine, though be careful not to over mix, as this will create a tougher texture for your pancakes. In a mixing bowl, beat the egg whites until soft peaks form. Gently fold the egg white into the batter. Heat griddle over medium heat, and butter lightly. Drop batter by 1/4 cupfuls onto griddle, place several slices of strawberries on each pancake. Cook pancakes until bubble form on top and bottoms are golden brown, turn pancakes over and cook until bottoms are golden brown, approximately 2 to 3 more minutes.
Orange Sauce
In a small pan, mix 2/3 cup sugar with 2 to 3 Tbsp. of corn starch. Add 2 cups of water and bring to a boil over high heat. Remove from heat and add 4 Tbsp. of butter, and 2 to 3 Tbsp. of orange zest and 1/4 cup freshly squeezed or store bought orange juice. Stir until the butter melts, serve and enjoy! May be stored in a container in the fridge for a week or so.
