I am continually reminded that breakfast is half of our name, and the importance of serving up above average fare. To that end, since it’s inception, I have entered the WBBA Cook-Off each year, this being it’s third year. I do this for several reasons, not the least of which is, I want to push myself in terms of the food that I am not only envisioning , yet also bringing that vision to life for my guests. Within our association we have some amazing home grown cooks & chefs, always striving to do better. There is no better way to challenge myself than to compete against those whom I hold in high regard within our industry. To hear those that you esteem, compliment you and have a conversation with you regarding their dish and how they came to enter that particular recipe is really wonderful. As I have said before, the networking and camaraderie that happens within our association is phenomenal. I have yet to place at our conference cook-off. Setting the stage yet again for striving to do better and go further in offering an excellent breakfast experience for our guests.
