			<content:encoded><![CDATA[<p>I have had the good fortune of meeting some fabulous people since I have become an Innkeeper, not only our guests, but people who have befriended me in the wonderful community that is Manawa. My family and I were privileged to be invited out to &#8221; The sap shed&#8221; to take part in a family tradition.  A tradition that is 100 or so years old, collecting sap from the trees on the family property and than they boil it down to make the delicious maple syrup that we serve at our Inn.  To be involved in the collecting followed by the camaraderie that is the sap shed.  They cook out and we all bring a dish or two to pass, it is a fabulous time.  I was able to share that with my husband Tim, as well as my daughter Morgan and her significant other Jeff.  Jeff being from the &#8220;Big City&#8221;, I think it was a fun time for him and he just got right in there no worries at all.  It was fun to see he &amp; Morgan enjoying their time together as well as doing something new to the both of them.  To be part of a discovery type of moment in my daughters life as well as the lives of those she cares about is special to be sure.  So thank you to our friends and their extended family, for treating us as one of their own and allowing us to take part in their lives.  I look forward to many more sap seasons. 			<content:encoded><![CDATA[<p>I have been pondering for quite some time about offering cooking classes here at the Lindsay House Bed &amp; Breakfast.  I am fortunate to be associated with some phenomenal cooks, women that have inspired me in the kitchen as well as in life. You may have seen on previous blog posts that I have mentioned my friend Pat.  She is a seasoned foodie &amp; cook in her own right, and now she has agreed to share her knowledge in the form of a cooking class here at our Inn.  I am thrilled to say the least.  She and I have enjoyed each others company in the kitchen for a long time, and to be able to share that with others will be a blessing for the both of us.  Check out our specials page for all the details.</p>

For my friend Pat whom I have mentioned before in this blog, she is originally from Arizona and her comfort food is tacos. I can always tell that Pat is having one of those days, if she tells me tacos are anywhere on her radar for the day.  For me, the terms comfort food evokes an image of a stack of pancakes, with butter melting and syrup in a glistening shallow pool on the plate. Taking the first bite of a plate of pancakes has to be one of the best things to happen in a day. Resting your fork atop the pancake stack and willing the fork to push thru all that fluffy goodness, only to draw that forkful with butter and syrup to your mouth for the first comforting bite.  Well as if you haven&#8217;t guessed by now, I served a Ginger Spice Pancake with pecan maple syrup for breakfast on Sunday, and let me just say they were wonderful. My daughter Morgan chose to have them in a sandwich form with cream cheese in the middle, sort of a pancakes to go type of thing. Here is my recipe to share. When you make these either for just yourself or for the ones you love, enjoy them and know that it might be the most comforting thing you do for yourself all day.</p>
<p>Ginger Spice Pancakes</p>
<p>3/4 cup water</p>
<p>1 cup buttermilk</p>
<p>2 eggs</p>
<p>1/4 cup brown sugar</p>
<p>2 tablespoons melted butter</p>
<p>2 cups all purpose flour</p>
<p>1 3/4 teaspoons baking powder</p>
<p>1 3/4 teaspoons baking soda</p>
<p>1/2 teaspoon salt</p>
<p>1/4 teaspoon cinnamon</p>
<p>1/4 teaspoon cloves</p>
<p>1 teaspoon chopped crystallized ginger ( I used a little more than that&#8230;I love ginger)</p>
<p>1 1/2 cups maple syrup</p>
<p>1/2 cup chopped pecans</p>
<p>Beat water, buttermilk, and eggs together in a bowl.  In a separate bowl combine brown sugar, butter, flour, baking powder, baking soda, salt, cinnamon, cloves and ginger. Add dry ingredients to the wet ingredients stirring until just combined, do not over-mix. Use either non stick spray or butter to ensure pancakes will not stick to griddle. Place approximately a 1/4 cup of batter per pancake onto griddle and cook until edges are dry, than flip them and cook other side. You may keep pancakes warm in a 200 degree oven, place a damp towel over pancakes to keep moist. Put 1/2 cup chopped pecans into a dry pan to toast on top of the stove, when nuts are toasted, add syrup.  Serve &amp; enjoy.</p>

			<content:encoded><![CDATA[<p>The 49<sup>th</sup> Iola Winter Carnival will be held on Saturday and Sunday, February 6-7, 2010.  Many activities will take place in this small Norwegian community.</p>
<p>The Winter Carnival Weekend kicks off Saturday, February 6th at 8:00 a.m. with an Ice Sculpture Contest—everyone is welcome to enter.  Contact Marsha Mueller by calling 715-445-2411 at the Iola-Scandinavia High School Art Department, to register.</p>
<p>The Iola Lake District will sponsor an Ice Fishing Contest on Saturday for children ages 16 and under.  The event will run from 10:00 a.m. – 2:00 p.m. on Lake Iola.</p>
<p>The annual Badger State Games Ski Jumping competition is held in conjunction with the Iola Winter Carnival.  Opening ceremonies are slated for Saturday at 12 noon.  Food and refreshments are available.</p>
<p>Other activities for Saturday include a Norwegian Lutefisk Supper and Indoor Craft Sale at the Iola-Scandinavia High School from 1:00 – 6:30 p.m.  The lutefisk and fresh cod with drawn butter will be served family style, along with meatballs, potatoes, vegetable, lefse, and Norwegian pastries.  Tickets are $12.00 each and $5.00 for children under 12.</p>
<p>On Sunday February 7<sup>th</sup> at 9:30 a.m. the Nordic Combined cross-country race will start.  At 12:00 noon the Central USSA Ski Jumping event will take place.  Admission is charged for a souvenir button.  Food and refreshments will be available. All ski events are located at the Iola Ski Jumping Complex located at E398 County Rd. MM—five miles northwest of the Village of Iola.</p>
<p>There is a raffle during the weekend that is sponsored by Iola Lions, American Legion Post 14 and the Iola Winter Sports Club.  Prizes being offered include $1,000, $500, $250, $250, 3 &#8211; $100.00 cash prizes and 2 &#8211; $100.00 Savings Bonds as well as numerous merchandise prizes.  Drawing will take place Sunday, February 7th and winners need not be present to win.</p>

The paddock area will be shared with contestants of the Lake Cross event, however the course will be totally independent. We will be supplying a plowed and broomed 660 foot course from start line to finish with an attached 500 foot shut-down area. Contestants will be offered 3 runs per admission. We will not be qualifying riders per class, but will be awarding a trophy for the fastest speed of the day.</span></span><span style="color: #660033;"> </span></strong><span style="color: #660033;">Race for (2) cases! Is a fun finale’ to the Derby, in which 2 riders mounted on a single machine begin the event on line from a standing start and will be required to complete 1 lap on a closed, marked, slalom course. Upon crossing the finish line, the driver and rider switch positions and then must complete another lap. The first team to cross the finish line wins 2 cases beverage of choice.</span></span><span style="color: #660033;"> </span></strong><span style="color: #660033;">This event will be the over-all singles Champion of the Derby and whose name will be inscribed in the Sell Family Trophy. Riders will compete individually, beginning the event on line from a standing start and will be required to complete 10 laps on a closed, marked slalom course. Races will begin by a green flag start, with a maximum of up to 20 total contestants; starting position will be assigned by random draw in 2 rows. 50% of total entry fee will be awarded with cash payouts for 1<sup>st</sup>-3<sup>rd</sup> place with name inscription for 1<sup>st</sup> place finisher on the Sell Family traveling Trophy. </span></span></span></span><span style="font-size: medium;"><span style="color: #660033;">Riders will compete individually, beginning the event on line from a standing start and will be required to complete 5 laps on a closed, marked, slalom course. Races will begin by a green flag start, with up to 10 total contestants; scores will be awarded by order of finish as the participant crosses the finish line. 50% of total entry fee per class cash payouts for 1<sup>st</sup>-3<sup>rd</sup> place with trophy awarded to 1<sup>st</sup> place finisher. Heats run as necessary. </span><strong><span style="color: #660033;">(Pro categories only—100% entry fee payback, 1<sup>st</sup> – 3<sup>rd</sup> place)</span></strong><span style="color: #660033;">Riders will compete in groups of 3 each wearing mutually colored bibs, with a maximum of 5 teams in contention at a time, however, only 1 team member per group will be on the track at a time. The first rider from each group will begin the event on line from a standing start; he will complete 2 laps on a closed, marked, slalom course. At the completion of 2 laps he will cautiously approach the start/finish line where the second relay man will be staged on the track. While mounted the first rider will make physical contact with the 2<sup>nd</sup> rider either by hand slap, pat on the back, etc&#8230; The 2<sup>nd</sup> rider will then likewise complete 2 laps and at the end of the portion, he will tag off to the 3rd driver or anchor man who will also complete 2 laps to finalize the event. Scores will be awarded by order of finish as the participant crosses the finish line. 50% of total entry fee per class cash payouts for 1<sup>st</sup> – 3<sup>rd</sup> place. 			<content:encoded><![CDATA[<p><img class="alignright size-full wp-image-859" title="Pat &amp; Judy" src="http://www.lindsayhouse.com/wp-content/blogs.dir/16/files/2010/01/Pat-Judy1.JPG" alt="Pat &amp; Judy" width="320" height="144" />My friend Pat &amp; I started a tradition several years ago (probably more like 10, but saying several makes me feel younger) of traveling to different Bed &amp; Breakfasts to meet and spend a girls weekend together. We found ourselves at a B&amp;B in Bluffton Indiana; it was about ½ ways for each of us, Pat travelling from Southern Illinois and me from Michigan. A lot of coffee, laughter and food were had on those special weekends.  Pat &amp; I were able to catch up on each others lives in a way that cards, letters, the phone and computers somehow don’t allow.  Our Innkeepers became friends after a few years, they were accommodating and wonderful. Gene &amp; Ruthann knew just when to come into the room and when to leave us by ourselves to catch up.  When the opportunity to purchase an Inn in beautiful Manawa WI came our way, Tim and I were both excited.  I shared my excitement with Pat, and I believe for both of us there was a touch of sadness to our news as well. She could come and be a part of our Inn during her visit, however it wouldn’t be the same as when we both took a vacation from our separate lives and it would be all about us for just that weekend.  We have owned the Inn for 5 years, and Pat has visited me each year, I am sometimes blessed by a visit from her twice a year. We have lots of fun each time she visits, each visit really being as unique as each of us and what we bring to our friendship.  I have been reminded this weekend of how blessed I am to have the friends that I have had and continue to have throughout my lifetime. There is a special bond between girlfriends that isn’t easily duplicated.  I have guests this weekend, 2 girlfriends enjoying their time together, catching up with each other’s lives, sharing memories and making new ones, all shared over delicious breakfasts, glasses of wine, diet cokes and snacks.</p>
<p>As women we do appreciate the connection between food and friendship.</p>
<p> </p>
<p>A big thank you to all of my friends, for their love &amp; support, and to Miss Pat, thanks for the B&amp;B weekends that inspired me to become an Innkeeper and pass along the joys of food &amp; friendship to my guests.</p>

This time of year is about many of what some may call the intangibles, those of faith, hope &amp; love.  This year has especially been a grand time for me, as my daughter Morgan and I had a baking day. We have cooked together in the past, this year has been especially wonderful for me. As we see the traditions that Tim &amp; I have either carried on from our families, or some we have started&#8230;we are beginning to see that they are meaningful to her, and that is exciting. So no matter what your traditions are, may you enjoy them to the fullest at this wonderful time of the year.</p>

One of the most precious things we can give at this special time of year is the gift of ourselves and our time.  The laughter shared with a friend over a lingering lunch or a quick cup of coffee. The gift made special by the small token tucked inside that reminds the recipient that they are special and thought of at this very festive time.  As we seek out the gifts we will give this season, let us remember that each of us is a gift to the people in our lives.  Merry Christmas, Happy Holidays &amp; Seasons Greetings from all of us here at Lindsay House Bed &amp; Breakfast.</p>
